22. Apple Cranberry Pie


1 x  Double Crust Pie Crust, 3/4 c  Sugar, 1/4 c  Corn starch, 1 t  Cinnamon, 5 c  Peeled apple slice 2 c  Cranberries, fresh or frozen, 1/3 c  Corn syrup, light or dark, 1 T  Butter or margarine, 1 x  Milk, 1 x  Sugar.


Prepare pie crusts for filled two-crust pie using a 9-inch pan. Heat oven to 450F.  In a large bowl, stir sugar, corn starch and cinnamon until well mixed.  In another large bowl, mix apples, cranberries and corn syrup. Add fruit to sugar mixture.  Mix to combine.

Spoon into pie crust-lined pan.  Dot with butter. Top with second crust; flute.  Cut four 4-inch slashes in center of crust forming a criss-cross design. Peel back center points and press lightly in crust to hold and form 8 petals.  Brush crust with milk; sprinkle with sugar.  Bake at 450F for 10 minutes. Reduce temperature to 350F; continue baking for 40 to 45 minutes or until golden brown. Cool completely on wire rack.  Store in refrigerator.

23. Apple Crumble Pie


1 (9 inch) deep dish pie crust, 5 cups apples – peeled, cored and thinly sliced, 1/2 cup white sugar, 3/4 teaspoon ground cinnamon, 1/3 cup white sugar, 3/4 cup all-purpose flour, 6 tablespoons butter. 


Preheat the oven to 400 degrees F (200 degrees C.) , Arrange apple slices in an unbaked pie shell. Mix 1/2 cup sugar and cinnamon; sprinkle over apples. 

Mix 1/3 cup sugar with flour; cut in butter until crumbly. Spoon mixture over apples. 

Bake in prehea0 minutes, or until apples are soft and top is lightly

24. Apple Crunch Pie With Cinnamon Ice Cream



6 Juicy sour apples, 1 c  flour, 1 c  Brown sugar, 1/4 lb margarine.


1/2 pt Whipping cream, 2 tb Sugar, 1 ts Cinnamon (heaping) 1 qt vanilla ice cream, 1 tb Red-hot cinnamon candy (opt).



Pare, core and slice apples, and put in pie plate. Mix flour and brown sugar, then add margarine and mix until crumbly. Sprinkle this mixture over apples and bake at 350 deg. for about 30 min. or until apples are done. Serve warm with Cinnamon Ice Cream.


Whip the cream, add sugar and cinnamon. Soften ice cream; add cinnamon mixture and whip. If desired, add cinnamon candy.

25. Apple Pastry Squares


1/4 c  Brown sugar, 2 tb Cornstarch, 1 c  Water, 5 c  Apples, peeled and sliced, 1/2 ts Cinnamon, 1/4 ts Nutmeg, 1 tb Lemon juice


2 c  Flour, 2/3 c  Shortening, 1/2 ts Salt, 2    Egg yolks beaten, 1/4 c  Cold water, 1 tb lemon Juice.


1/2 c  Powdered sugar, 1 tb Milk, 1 tb Butter or margarine, 1/2 ts Vanilla.


Combine sugar, cornstarch and butter in a saucepan.  Mix until well blend, add apples.  Heat to boiling, stirring constantly. Remove from heat, stir in spices and lemon juice, set aside.

For pastry, combine egg yolks, water and lemon juice.  Blend into flour. Mixture will form a ball, divide in half.  On lightly floured board, roll dough between 2 pieces of waxed paper to fit bottom and halfway up sides of a 9×13 inch pan. Spread apple mixture over pastry.  Roll remaining pastry to fit pan. Place on top of filling. Fold bottom pastry over and press to seal. Cut a few slits on top. Bake for 40 minutes at 400 degrees or until lightly browned.

Combine ingredients for glaze and drizzle over cooled pastry.
